Apricots And Gardening
How did I know about apricots ! Well I didn't until It all started with our small " farm " whom I was assured by my husband would stay Small ! Well 400+ fruit Trees, A huge Garden, goats, chickens, dogs and more its no longer " small " I have a feeling this year getting your share of luscious apricots will not be a problem ! Our Apricots consist of smooth, rosy-tinged orange snacks that can go so much further ! Blenheims are the best apricots also known as the "darlings". These are found of course on our property as well as many as the Farmers Markets as they do not pack or ship well. Like Other sweet fruit such as cherries, Apricots pair well with chicken. Here is a great idea and something to impress your summer guests with ! Stuff Chicken Breasts with chopped Apricots, Chevre and Loads of Fresh Thyme ( yes we grow that too ) and roast until golden . Another GREAT idea is to stuff Halved apricots with Gorgonzola and chopped toasted walnuts ( and yes in case you are wondering we have several walnut trees as well :) Take the stuffed apricots with Gorgonzola and Chopped Toasted walnuts and grill skin side up until the cheese is just starting to melt, then drizzle with a bit of orange juice. And of course there is the famous Apricot Pie or Apricot Crisp. This is quick and easy and my guests rave about it. Place about 10 cups of halved pitted apricots in a baking dish sprayed with Pam. Mix 1 cup of flour, 1 cup brown sugar, 1/2 butter, 1 tsp vanilla, 1 tsp cinnamon and a pinch of salt together and sprinkle on top. Bake for approx 1 hour at 350 degrees and get ready for your guests to ask for more ! So be sure to be on the lookout this spring for those wonderful Apricots and make your summer parties the ones your guests will remember ! |
